  • 2 cups beef broth

  • 2 tablespoons tomato paste

  • 2 bay leaves

  • Salt and black pepper, to taste

Instructions:

1. Preheat your oven to 325°F (163°C).
2. Season the beef roast generously with salt and black pepper.
3. Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
4. Sear the beef roast on all sides until browned, approximately 4-5 minutes per side. Remove the roast from the pot and set it aside.
5. In the same pot, add the garlic and diced onion. Sauté until the onion becomes translucent and aromatic, around 2-3 minutes.
6. Add the sliced carrots and chopped celery, stirring them with the onion and garlic mixture. Cook for another 2-3 minutes or until the vegetables start to soften.
7. Deglaze the pot by pouring in the red wine, scraping the bottom to release any browned bits. Allow the wine to simmer and reduce slightly for about 2 minutes.
8. Stir in the beef broth, tomato paste, and bay leaves. Bring the mixture to a gentle boil.
9. Return the seared beef roast to the pot, ensuring it is fully submerged in the liquid.
10. Cover the pot with a lid and transfer it to the preheated oven.
11. Braise the beef roast for approximately 3 to 4 hours, or until the meat is fork-tender and easily falls apart.
12. Once cooked, remove the pot from the oven and carefully take out the beef roast, placing it on a platter. Cover it with foil to keep it warm.
13. Skim off any excess fat from the remaining liquid in the pot and discard the bay leaves and thyme sprigs.
14. For a thicker sauce, you can blend the remaining liquid with an immersion blender or strain it through a fine-mesh sieve.
