Ingredients
10-14 lb Turkey
Turkey Dry Rub ingredients below
Peanut Oil
Creole Butter Turkey Injection
1/2 medium onion sliced
1 green pepper sliced
For the Dry Rub:
1 Tbs Salt
1 Tbs Pepper
1 Tbs Cajun rub
1Tbs Granulated Garlic seasoning
Instructions:
Prep Turkey
1. Thaw the turkey.
2. Measure how much oil you will need for your fryer. Add the turkey to your fryer with water and fill until the turkey is immersed and mark where you will need to add the oil.
3. Remove all the gizzards and neck from the turkey.
4. Insert the onions and green peppers into the turkey cavity.
5. Apply the rub over the entire turkey and inside the cavity, make more if need to ensure the turkey is covered with the dry rub.
6. Inject the turkey with the Creole Butter, into the breast legs, and thighs.
7. Cover the Turkey and let set over night or for at least 8 hours prior to cook.
8. Remove the turkey up to an hour prior to cook and apply more seasoning if needed.
9. Smoke the turkey in your smoker for at least 2 hours; you do not want the turkey to dry out from the smoke so monitor it . I pulled my turkey when it reached an internal temp of 110 degrees.
10. Add your peanut oil to your deep fryer and desired portion which will vary with the size of your turkey. “ I recommend you do a dry run with water and your thawed turkey to see the amount of oil you will need to immerse the turkey without overflow.
11. I typically fry my turkey at 3 minutes per pound, for this cook my turkey 10 lbs. was completely cooked in 32 minutes.
12. Let Turkey rest. Then slice and serve.
