Preparation:
Preheat your grill to 320°F (160°C).
While the grill heats up, begin by taking the slabs of ribs from the fridge and let them get to room temperature.
Prepare a spray bottle with apple juice.
Ingredients:
2 slabs of Pork ribs
1 tbs salt
1 tbs pepper
4 oz of Apple Juice
1 container of Sweet & Smoky Dry rub or your own dry rub mix
Instructions:
1. Preheat your grill to 320°F (160°C). For my grill I use a 70/30 mix of charcoal and wood, for this smoke my wood of choice was Cherry wood.
2. Season the ribs with a good base of salt and pepper/ both sides.
3. Then cover both sides of the ribs with the dry rub.
4. Cover the meat overnight in the refrigerator/ or 4 hours.
5. Remove the ribs from the refrigerator at least 30 minutes uncovered before you grill.
6. Place the slabs of meat evenly on the grill.
7. Lightly coat each slap with the dry rub mix. Close it up and let it smoke.
8. I check my ribs on the hour and hit it with a spray of Apple juice on each side as I flip the ribs.
9. Once my ribs reach an internal temperature between 195-200 degrees I pull the meat and let it rest for about 30 minutes before I cut.
10. Grilling will be take approximately 2 1/2 to 3 hours depending on your steady internal cooking temp for your grill and the meat.
